Croaker Fish Pepper Soup Recipe: Lagos Style
Croaker fish is the quiet aristocrat of Lagos pepper soup. While catfish gets the fame (the point-and-kill drama, the Instagram posts, the late-night bar orders), croaker sits at the table with a different kind of confidence. It doesn't need the spectacle. The flavour speaks.
The flesh is firmer than catfish, with a clean, almost sweet taste that holds its shape in the broth. Where catfish yields and dissolves into the soup, croaker maintains its composure. You get distinct flakes, each one carrying the full weight of the spice without falling apart.
This is the pepper soup you order when you want precision. When you want to taste the fish as much as you taste the broth. When you want something that sits between the richness of catfish and the lightness of tilapia, right in that perfect middle ground.
At Chipat Bar, we serve whole croaker fish pepper soup at ₦10,000, or ₦12,000 with sides. The fish comes in fresh, gets cleaned properly, and goes into a broth that's been building flavour for hours. The result is a bowl that's elegant without trying to be.
Croaker fish pepper soup is also the one that converts sceptics. People who say they don't like fish in their pepper soup, who lean towards goat meat or chicken, try croaker and understand that fish pepper soup isn't one thing. It's a spectrum. And croaker is at the refined end of it.
In many Lagos households, croaker fish pepper soup is what you make when guests are coming. It's presentation-ready by nature: the whole fish, the clear golden broth, the scatter of scent leaves on top. It looks like you tried hard, even when the hardest part was just letting the broth do its work.
Croaker Fish Pepper Soup: The Recipe
Ingredients
Method
- 1
Clean the croaker fish
Scale the fish thoroughly, gut it, and remove the gills. Rub with lime juice and salt, then rinse under cold running water until completely clean. Unlike catfish, croaker doesn't have slime, but it does need proper scaling. Pat dry and set aside.
- 2
Build the aromatic broth
Combine 6 cups of water with the chopped onion, garlic, ginger, one seasoning cube, and a pinch of salt in a large pot. Bring to a boil and let it simmer for 5 minutes. The broth needs to be fragrant and flavourful before the fish goes in.
- 3
Add the pepper soup spice
Stir in the pepper soup spice mix, ground crayfish, and remaining seasoning cube. Reduce heat to medium and simmer for 10 minutes. The broth should take on a warm golden colour with a complex, layered aroma: the uda providing smoke, the uziza adding bite, the ehuru rounding everything out.
- 4
Cook the croaker fish
Gently lower the whole croaker fish into the broth. Add the scotch bonnet peppers (whole for mild heat, lightly crushed for more kick). Simmer gently for 12-15 minutes. Croaker cooks faster than catfish and holds its shape better. Don't stir aggressively; move the pot gently if needed. The fish is done when the flesh flakes easily but stays on the bone.
- 5
Finish with scent leaves
Turn off the heat and scatter the torn scent leaves over the top. Cover the pot for 2 minutes to let the herbal fragrance infuse. Serve in a wide bowl with the whole fish displayed proudly in the clear, golden broth. This is pepper soup that's as beautiful as it is satisfying.
Every spice used here is laid out in our pepper soup ingredients list, with pictures and both the Nigerian and botanical names.
