    How We Grill It

Good grilled catfish starts before the fire. We salt the fish and leave it for twenty to thirty minutes, which loosens the slime so it comes away cleanly, then wash it thoroughly in warm water until the skin is clean. Skipping that step is why grilled catfish sometimes tastes muddy, and it is the part most kitchens rush.

Once it is clean, the fish is seasoned with our own blend of spices and left to marinate for fifteen to twenty minutes so the flavour goes past the skin. Then it goes on the charcoal grill and stays under watch the whole time, turned until the outside is crisp and the inside is still juicy and tender. Nothing sits waiting, so every order is grilled fresh.

It comes to the table hot, with sweet potatoes, yam or plantain, fresh coleslaw and our pepper sauce. If you would rather have the same fish in a bowl of broth, read about catfish in pepper soup instead.

    Grilled Fish or Barbecue Fish?

Is this barbecue fish or grilled fish?

Both names describe the same plate. In Lagos most people say barbecue fish, and that is what you will hear if you ask for it at the bar. On the menu we call it grilled fish. Either way it is whole catfish or croaker, coated in our pepper marinade and cooked over open charcoal on a wire grate, which is the way barbecue fish has always been done in Lagos.

    First time here?

If you are new to Nigerian food, the charcoal barbecue fish is the easier place to start. It is grilled, not stewed, and the pepper sauce comes on the side so you decide how much to use. When you are ready for a bowl of broth, read how hot the pepper soup actually is.

Grilled Chicken is also available at ₦6,000, and you can see the full menu here .
