Prawns, crab, and periwinkle meet pepper soup broth. Served with pride at Chipat Bar Lagos.

Seafood pepper soup is what happens when the ocean meets a Lagos kitchen. It's lighter than the meat-based versions, more delicate, more nuanced, but no less powerful. The broth carries a different kind of depth: briny, sweet, and clean.

Lagos sits on the coast, and that geography shows up in this pepper soup. The prawns come from the lagoon and the Atlantic. The periwinkle is harvested from the creeks. The crabs are brought in fresh from the markets that line the waterfront. This is coastal Nigerian cooking at its most honest.

What makes seafood pepper soup different from catfish or goat meat pepper soup is timing. Seafood doesn't need hours. Prawns cook in minutes. Crab needs maybe ten. Overcook either and you lose everything: the prawns become rubber, the crab dries out, the whole point disappears.

This means the broth has to be built before the seafood goes in. You can't rely on the protein to create the flavour the way you can with goat meat or cow tail. The spice base, the aromatics, the crayfish: they all have to be in place and simmering before a single prawn touches the pot.

The visual impact of seafood pepper soup is unmatched. Orange prawns curling in the broth, dark periwinkle scattered like stones, crab legs breaking the surface. It's a bowl that photographs itself. But the looks are secondary to what's happening in the liquid: a light, intensely flavoured broth that tastes like the sea decided to cook for itself.

At Chipat Bar, our seafood pepper soup uses the same spice blend we apply to all our pepper soups (uda, uziza, ehuru, scotch bonnet) but the ratio shifts to complement rather than compete with the delicate seafood flavours. The spices support instead of dominate.

This is the pepper soup for lighter appetites, for those who want the heat and the aroma without the heaviness. It's lunch pepper soup, weekend-by-the-water pepper soup, or the bowl you order when you've already had Nkwobi and goat meat and you want something that cleanses rather than adds.

    Seafood Pepper Soup: The Recipe

    Ingredients

    Method

    1. 1

      Build the seafood broth

In a large pot, bring 6 cups of water or fish stock to a boil with the chopped onion, garlic, ginger, and one seasoning cube. Let it simmer for 5 minutes. The base needs flavour before the seafood goes in; seafood cooks fast and there's no time to build flavour after.

    2. 2

      Add spices and crab

Stir in the pepper soup spice mix, ground crayfish, and remaining seasoning cube. Add the crab halves first; they need the most time. Simmer for 10 minutes until the crab shells turn bright orange and the broth absorbs their sweetness.

    3. 3

      Add prawns and periwinkle

Add the prawns and periwinkle to the pot. Prawns cook in 3-5 minutes; overcook them and they become rubbery. Add the scotch bonnet peppers now too. Simmer on medium-low for 5 minutes. The broth should be light but deeply flavoured, nothing like the heavier meat-based pepper soups.

    4. 4

      Finish and serve

Turn off the heat, stir in the torn scent leaves, and let the pot rest for 2 minutes. Serve in wide, shallow bowls so the seafood is visible. This is pepper soup that looks as good as it tastes: the orange prawns, the dark periwinkle, the crab legs breaking through the surface of the broth. Coastal Lagos in a bowl.

Every spice used here is laid out in our pepper soup ingredients list, with pictures and both the Nigerian and botanical names.
