Nkwobi: The Spicy Igbo Delicacy Lagos Can't Get Enough Of
What is Nkwobi? A complete guide to the spicy cow foot delicacy: how it's made, what makes it special, and where to find authentic Nkwobi in Lagos.
What Is Nkwobi?
Nkwobi is cow foot (or cow heel) cooked until tender, then dressed in a thick, spicy palm oil sauce enriched with utazi leaves, onions, and a blend of traditional Igbo spices. It's served in a wooden mortar and eaten as a communal dish, usually alongside cold drinks.
If you've been to any serious Nigerian bar or outdoor joint in Lagos, you've seen it. The wooden bowl. The orange-red sauce. The group of people leaning in. That's Nkwobi.
Prefer to skip the cooking? We deliver across Lagos, including Lekki, Victoria Island and Ikoyi.
How Nkwobi Is Made
The cow foot is boiled until it yields to a fork, not falling apart, but soft enough that every bite includes both meat and the gelatinous connective tissue that makes the dish so satisfying. This takes time. Good Nkwobi isn't rushed.
The sauce is the signature. Potash (ngu) is dissolved in warm water, mixed with palm oil, and stirred until the oil thickens and lightens in colour. Ground ehuru, crayfish, scotch bonnet, and seasoning cubes are mixed in. The cow foot pieces are tossed in this sauce and finished with sliced utazi leaves and onion rings.
Nkwobi vs Isi Ewu (Isiewu)
People often confuse the two. Nkwobi is cow foot. Isiewu is goat head. Both are served in the same style (wooden mortar, palm oil-based sauce, utazi leaves) but the proteins are completely different, and so is the texture.
Nkwobi is gelatinous and yielding. Isiewu is firmer, with more variety of textures from the different parts of the goat head. Both are excellent. Both deserve their own bowl.
Nkwobi at Chipat Bar
At Chipat Bar in Ikoyi, Nkwobi is one of our most ordered dishes. We prepare it with properly softened cow foot, fresh palm oil sauce, and hand-shredded utazi leaves. It arrives in the traditional wooden bowl.
It pairs perfectly with our pepper soup. Many customers order Nkwobi as a starter alongside a bowl of catfish pepper soup. It's the kind of combination that turns a meal into an evening.
Where to Find Nkwobi in Lagos
Nkwobi has gone from being an Igbo specialty to a Lagos-wide favourite. You'll find it at bars and restaurants across the city, from high-end spots in VI to outdoor joints in Surulere.
The best Nkwobi comes from places that cook the cow foot properly (patience, not pressure cooker shortcuts) and make the palm oil sauce fresh. At Chipat Bar, we do both. Order for delivery anywhere in Lagos.
