Isiewu: The Goat Head Delicacy Every Lagos Bar Serves
What is Isiewu? A guide to the traditional Igbo goat head delicacy: how it's prepared, what makes it special, and where to find the best Isiewu in Lagos.
What Is Isiewu?
Isiewu (also spelled Isi Ewu) literally translates to 'goat head' in Igbo. It's a traditional delicacy where the goat head is slow-cooked until tender, then served in a spicy palm oil sauce flavoured with potash, utazi leaves, and ground ehuru.
It's one of those dishes that sounds challenging to the uninitiated but converts everyone who tries it. The goat head has an incredible variety of textures: tender cheek meat, rich tongue, soft cartilage, all dressed in that signature orange-red sauce.

How Isiewu Is Prepared
The goat head is cleaned meticulously: singed, scraped, washed multiple times. Then it's boiled with seasoning cubes, onions, and salt until every part is tender. This can take 1-2 hours depending on the size.
The sauce follows the same principle as Nkwobi: potash dissolved in water is mixed with palm oil until it emulsifies and thickens. Crayfish, ehuru (calabash nutmeg), scotch bonnet, and other seasonings are added. The cooked goat head pieces are tossed in this sauce and garnished with utazi leaves and fresh onion rings.
The Texture Experience
Isiewu isn't a one-note dish. Every piece of goat head offers something different. The cheeks are soft and rich. The ears have a pleasant chewiness. The tongue is smooth and meaty. The brain (yes, the brain) is creamy and mild.
This variety is what makes Isiewu a communal dish: everyone reaches for their favourite part. Arguments over who gets the tongue are part of the tradition.
